Super Easy Coconut Chia Seed Pudding
Chia seeds are healthy, delicious, and a good source of fiber. This recipe is perfect for a snack, breakfast, dessert, or smoothie. You can have it cold or hot and eat this with fruits, nuts, oatmeal or sweet potato – basically anything you like=) You can combine this with oats as a great breakfast on-the-go for the next morning. I like to eat mine warm with sweet potato. You can spice it up with a dash of cinnamon, honey, and/or vanilla extracts.

Ingredients
1 can coconut milk (13.66 fl oz, 403 ml, about 1 1/4 cup)
1 can of water ( use same amount as coconut milk, about 1 1/4 cup)
1/3 cup chia seeds
1/4 tsp vanilla extract (optional)
honey (optional)
Pour all ingredients in a pot and cook on high heat until boil. Mix it a little bit.
Cook at low heat and stir every 5-10 minutes to prevent clumping. Cook for 30 minutes.
