Moist Semi-Sweet Chocolate Chip Muffins

Hello! I’m going to share an extremely mouth watering recipe today. There is no turning back. I made this several times already, and many times when I was pregnant. It was all the cravings. Luckily, I had all the ingredients needed for this yummy treat at home, so of course I went ahead and baked a batch. This recipe is my “healthy” version for sweet cravings. I added coconut oil and less sugar.

Time: 40 Minutes

This recipe makes about 12 cupcakes.

Ingredients:

3/4 cups flour

1/2 cup cocoa powder (unsweetened)

1/4 tsp salt

1/2 tsp baking soda

3/4 tsp baking powder

1/4 – 1/2 cup brown sugar ( I used 1/4 cup, it depends on how sweet you would like it)

1/4 -1/2 cup white sugar ( I used 1/4 cup, it depends on how sweet you would like it )

2 eggs

1/3 cup coconut oil (slightly melted)

2 tsp vanilla extract

1/2 cup whole milk ( could substitute this with plant based milk or yogurt )

1/2 cup chocolate chips (optional)

1 tbsp chia seeds (optional)


Preheat oven to 350F.

Mix 3/4 cups of flour, 1/2 cup cocoa powder (unsweetened), 1/4 tsp salt, 1/2 tsp baking soda, and 3/4 tsp baking powder in a bowl. Mix until all ingredients are blended together.

Mix 1/4 cup of white and brown sugar ( you may add another 1/4 cup of each sugar if you like it sweeter), 2 eggs, 2 tsp vanilla extract and 1/3 cup of slightly melted coconut oil into a larger bowl.

After they are slightly mixed, add in the milk and mix again.

Pour the dry ingredients into the wet ingredients slowly and mix until all ingredients are blended well together. ( see picture for reference)

This part is optional, but once the ingredients are combined and mixed well, add in the 1/2 cup of chocolate chips and 1 tbsp chia seeds.

Get the cupcake pan ready and lined, then pour in the mixture about halfway.

Put the pan in the oven and bake for about 18-20 minutes. ( I have a fire oven, and it takes about 18 minutes. I would recommend a toothpick check in the the middle of the muffins at around 15 minutes. If the toothpick comes out smooth, then it is done. If it comes out still sticky, then bake for a little longer. )

Once the cupcakes are done, take them out and enjoy! I like to eat these muffins with a cup of milk. They are so fluffy and moist when eaten right out of the oven, but be careful not to burn yourself. They are tasty after cooling as well! You can warm them up by microwaving the cupcakes for about 10-15 seconds to indulge for later.
