• Buttermilk Fried Chicken

I am going through a buttermilk kick right now. I found that it works well with fried chicken. Honestly, I haven’t had fried chicken since my pregnancy. Yeah, pretty crazy… but I was just craving it so badly the other day, so I made some! They turned out super juicy on the inside, yet crispy on the outside. So delicious! They are flavorful with the spices and the cayenne pepper gives it a good kick. Elsie loves this recipe and had 1 whole drumstick! Then I made more, and tried baking it. I prefer the deep fried method, but I will include both below. I feel that the deep fried…

  • The Best Buttermilk Biscuits

Today, I am so exited to share my homemade buttermilk biscuit recipe, and as you can see so is my little one. It is so fluffy and soft with just the right amount of crisp. These taste best when eaten warm and they are so deliciously irresistible fresh out of the oven! The hubby ate 5 right off the rack, and Elsie – my 15 month old – had an entire biscuit to herself. These disappear very quickly and you could try saving some for later… but honestly they might be gone. Since this recipe only calls for a few ingredients, I would recommend getting some good quality ones if…

  • Korean inspired Galbi-jjim 갈비찜 – Braised Beef Short Ribs

I’ve been having korean food cravings lately. To satisfy my brain and tummy, here is my inspired take on Galbi-jjim- korean braised beef ribs. It is so delicious and tender. When I was pregnant with Elsie, I would constantly crave for Korean food, especially ramen and spicy food. At some point, I had to control myself. It was an extremely wonderful time – while it lasted. Making this dish with 3 pounds of rib meat, I added many more (optional) ingredients as shown in the picture below. After this, I came up with a more manageable amount using just 1 pound of meat, and it was a lot easier to…

I know this is not an easy time for everyone, and I feel the same way. Although temporary, let me take you guys through this scrumptious Hawaiian inpired shrimp recipe! I hope you guys enjoy it!  Time: 20 minutes Ingredients 1/2 pound Shrimp (about 11-12 shrimps. It is best to use fresh shrimp, I bought…

  • Super Easy Coconut Chia Seed Pudding

Chia seeds are healthy, delicious, and a good source of fiber. This recipe is perfect for a snack, breakfast, dessert, or smoothie. You can have it cold or hot and eat this with fruits, nuts, oatmeal or sweet potato – basically anything you like=) You can combine this with oats as a great breakfast on-the-go for the next morning. • Easy Garlic Basil Pesto Recipe

If you are a garlic lover, you’ll love this recipe! =) It’s also been professionally tested by my 1 year old, and was given a big smile and a stuffed green face of approval. Yay! I’ve made this a few times now, Elsie – my little one – loves it! It is super easy to put together and tastes best fresh (though it can be stored in the fridge for up to 2 nights in a tight sealed container). I would recommend getting the freshest ingredients possible for this recipe. Time : 15 minutes Ingredients 1/2 cup of nuts (Most recipes call for pine nuts, which is a good option,…

  • Baby Elsie’s First Cherry Blossom

Happy Spring everyone! Cherry blossoms are one of my favorite flowers, and since it’s that time of the year, I just had to take some pictures with Elsie. (And yes, Kai and I finally named her! Yay! She’s named after Kai’s grandma. Grandma Elsie was an amazing, strong, and generous woman. Surely, Elsie will grow up to be healthy and strong, kind and wise just like her greatgrandmother.) I think Elsie enjoyed this mini photo shoot today. It was a tad windy, but she was half asleep and happy, so I guess that worked for baby picture taking. We found the perfect mini cherry blossom tree that matched her little…

  • My Gentle C – Section Story

I had an incredible gentle c-section experience. My birth plan went pretty much how Kai and I wanted it to be, and we had a full team of amazing doctors and nurses. Prior to all this, I never imagined I would get my stomach cut open or how much I wanted to have a vaginal birth. It was physically and emotionally difficult to accept that my placenta previa wasn’t going to move at 37 weeks, and that I would have a scheduled c-section. I think having a strong support system, and doctors who I trusted helped get me through this pregnancy and delivery process. I am extremely grateful for that.…

  • My First Pregnancy Journey

Where should I even start?! Every pregnancy experience is different and unique, and here’s my personal journey. Pregnancy is an exciting and beautiful adventure. As I’m writing this, I just finished my 1 month postpartum confinement period (1 month confinements are pretty common in some cultures, and I will talk about my experience in a future post). As for my pregnancy journey, I have been embracing the whole process, and I really enjoyed being pregnant. The very first incident of doubts began when I smelled salmon, I literally gagged. I asked my hubby – Did this salmon go bad already? We just made it yesterday. He replied that it smelled…
